Singapore Hawker Centres: Chilli Crab, Laksa & Local Food
Singapore's hawker centre culture — a UNESCO Intangible Cultural Heritage since 2020 — is one of Asia's great food institutions. These open-air, government-subsidised food courts allow master cooks to focus entirely on perfecting a single dish over decades, producing extraordinary quality at S$4-8 per plate.
Must-Try Hawker Dishes
- Chilli Crab — the national dish. Mud crab in a sweet, spicy, slightly eggy tomato-chilli sauce, eaten with mantou (fried buns). Maxwell Food Centre and restaurants on East Coast Seafood Centre are key locations.
- Laksa — spicy coconut curry soup with rice noodles, prawns and cockles. The Katong version (distinctive short-cut noodles) is the most famous; 328 Katong Laksa is the institution.
- Hainanese Chicken Rice — poached or roasted chicken over fragrant rice, with three dipping sauces. Tian Tian Chicken Rice at Maxwell Food Centre has a Michelin Bib Gourmand.
- Char Kway Teow — wok-fried flat noodles with Chinese sausage, cockles and egg. Order from a hawker using a blackened, well-seasoned wok.
